Thivaiki Gi "aimed at highlighting the special features of the region's wine". Thivaiki Gi winery is located in Vagia, Boeotia, where quality wines and special tasting wines are produced, highlighting the potential of Boeotia. The vineyard is located in the Paliabello area at the foot of Sphinx Mountain and covers an area of 180 acres. Here the harmonious cosmopolitan varieties of Merlot, Cabernet Sauvignon, Cabernet Franc, Sauvignon Blanc, Syrah and Greek Assyrtiko, Malagouzia, Mouchtaro and Savvatiano are harmoniously co-existing. Linear planting, double-sided planting and careful cultivation ensure excellent grape quality for the company's wines. The grape pulp is fermented in small stainless steel, refrigerated tanks so that the freshness of the grape passes unalterable into the wine. At the end of the fermentation some of the wines mature in oak barrels, ensuring the development of aromas and flavors. It is a dynamic and enduring effort of Panos and Sotiria Katrisiotis with the sole aim of creating authentic, quality wines.
