The Sangiovese comes from the property's own vineyards in Pontikiana, Chania. After careful care in the vine and adhering to the perfect phenolic ripening of the grape, a careful vinification of the juice follows. It stays in French oak barrels for about 11 months with only 20% being new while the rest being second and third use.
