Adriani , Drama viticultural zone, North - east Macedonia. 2 Ha linear privately-owned vineyards situated at an altitude of 200-300 m. Clay soil of fine drainage over thin limestones. Crop yield 800-900 kg per acre.
The harvest takes place at night, in order to have chilled grapes and not warm (contrary to the harvest that takes place during the day). As a result the grapes are, faster and without a thermal shock, cooling for the prefermentation cold maceration.
Varietal composition
SauvignonBlanc 60%, Chardonnay 30%, Assyrtiko 10%
Vinification
The vinification is made separately for each variety, pre-fermentation cooling maceration for the increase of the aromatic potential of the varieties and only raw juice is used for fermentation. Aging on fine lees for 2 months.
Tasting notes
Flavors of citrus fruit, melon, exotic fruits (mango, pineapple) in an astonishing combination. It has a full-bodied taste, balanced acidity with an aromatic potential and fresh aftertaste.
Food pairing
Salads, grilled vegetables, pasta with cheese or seafood, grilled or fried fish, chicken and white meat accompanied by white dressings. Served in 8-10οC.
