Winemaking
Reinventing one of Greece's wines, known all over the world as Retsina, which is a resinated traditional wine. Our 2018
Koukounari distinguishes itself by being a slightly resinated wine produced from quality grapes from our Chardonnay field, located at the PGI area of Epanomi.
The grapes are handpicked and pressed within the hour. Thereafter the must is cooled to 14°C in our temperature controlled stainless-steel tanks.
During second stage while the 1/3 of the fermentation process took place, a small amount of natural resin, collected from the
Pinetree's growing on the Chalkidiki Peninsula, is added to the must. This adds to the finished wines a subtle, but distinctive aroma of the pine reisin.
Following the fermentation, the wine is racked and kept on its fine lees for 6months.
