Adriani, Drama viticultural zone, North - East Macedonia. 1 Ha linear privately-owned vineyards of Pinot Noir –the TREE- and 0,4 Ha linear privately-owned vineyards of Agiorgitiko situated at an altitude of 200-300 m. Clay soil of fine drainage over thin limestones.
Low crop yield 450kg per acre, succeeded with the method of Green Harvesting. An amount of unripe grapes is trimmed, in order for the ripe bunches to reach the perfect maturation.
The harvest takes place at night, in order to have chilled grapes and not warm (contrary to the harvest that takes place during the day). As a result the grapes are, faster and without a thermal shock, cooling for the prefermentation cold maceration.
Varietal composition
Pinot noir 60%, Agiorgitiko 40%
Vinification
Classic red fermentation, after the malic-acid fermentation and the aging on the fine less. The oxidative ageing is made in the underground cellar in French oak barrels for 10 months. Reductive ageing in the bottles for 12 months.
Tasting notes
Deep red color with aromas of gooseberry, cherry and violet with notes of vanilla and nutmeg. Rich taste and soft tannins that boost the richness of the aftertaste.
Food pairing
Spicy sausages, marinated meat, risotto with mushrooms and truffle. Cheese with heavy flavors. Served in 16-18oC.
