Variety of grapes: “Kosmas”, “Mountainous Roditis” an“Malagouzia”
Description:
It comes from the varieties “Kosmas”, “malagouzia” (white variety, gentle) and mountainous “Roditis”, (a rare clone of “Roditis” which has a strong ruby color). The combination of these varieties is harmonious and gives richness to the wine. Due to the technique that is vinified, it is richer in body and organic ingredients. (Winemaking with extraction of 3-5 days depending on the year, as described in detail in the next paragraph Production Details). It is traditionally vinified together with the marcs in open oak tanks with the use of fir branches and river stones at the top, to protect the grape pulp from oxidation. This practice naturally secretes a small amount of fir resin into the must. Fir resin will add antiseptic protection, texture and some flavor to the wine, giving it a unique seal. Nothing is added (the wine is without chemicals, sulfites, stabilizers, etc.).
Color
Rosé, some years slightly cloudy.
Smell
Aromas of forest fruits, citrus. Light notes of resin.
Taste
Balanced body, soft tannins, delicate aftertaste.
Pairings
It is drunk at 10-12 degrees Celsius. Ideal for aperitifs. Accompanies salads, light meals, soft cheeses.
