Winemaking
The location of this vineyard, altitude and geomorphology favors organic farming without compromises to quality. Harvested during the first fortnight of September, the mash standing and the first stage of fermentation of the selected grapes takes place at a low pace and low temperatures. The fermentation process is finished in our underground stone cellar in oak barrique casks, half of which are new and rest hald of second year use. Malogalactic fermentation follows another 24 months of ageing in the casks and at least another year ageing after bottling, in our cellar.
Eye-Nose-Palate
The wine has a deep concentrated purple colour with violet hues. The nose is strongly aromatic comprised by notes of sour cherry, black currant, prunes, dark chocolate and dried fruites, accompanied by a tender vanilla and caramel notes. Well worked palate, medium to strong tannins and refreshing acidity. The fruit is most consicuous in dried prunes, raisins and ripe black cherry. Rich notes of cocoa, espresso, cedar, cinnamon and pepper complement the unique set. The aftertaste is quite long and pleasantly spicy.
