The two varieties, Malagouzia and Assyrtiko, are planted in the same vineyard,
are collected and fermented together. This process helps to unite the fresh, typical acidity of Assyrtiko with the full aromas of Malagouzia, creating the perfect combination of aromas and fresh, balanced acidity. After the fermentation, wine is kept for four months with its lees.
